A

After (Post) Purge

Cooling process via air replacement in the oven after turning off burners in order to cool the band and oven furnace.

Air-Rich

A state in which the amount of air is larger than the optimum ratio of gas and air in combustion. Purplish flame.

B

Balanced Zero Regulator

A regulator that reduces primary side pressure to atmospheric pressure, at near zero (0) pressure, at the outlet side. The purpose of the regulator is meant to decrease fluid pressure to equal air pressure.

Burner

A device or equipment that mixes gas and air for burning. e.g. Pipe ribbon burner, Gun-type burner etc.

Burner Mixer

The parts of a pipe ribbon burner which function to pre-mix gas and air and feed this mix into the actual burner pipe.

Burner Plate

The ring-shaped plate that affixes a pipe ribbon burner to the oven body.

C

Convection

Flow of heat through air, liquid, or gas, as the hotter part rises and the cooler part falls. This transfer of heat is called convection.

D

Direct Oven

An oven that bakes food using a heat source directly. In the case of Naigai Vicars, our direct ovens uses gas as its heating source and is referred to as a DGF oven (Direct Gas-Fired Oven).

Double Shut-off Valve

Two safety valves for each burner that are installed in series to shut-off gas supply immediately if and when an abnormal and/or dangerous situation occurs.

E

Electric Oven

An oven that uses electricity as its heat source.

G

Gas Oven

An oven that uses combustion gas as its heat source.

Gas-Rich

A state in which the amount of gas is larger than the optimum ratio of gas and air in combustion. Greenish / Orangeish colored flame.

Gun-type Burner

A type of burner that injects gas from radial nozzles, and forms a flame by postmixed combustion.

Hard Biscuit

Biscuits with low levels of sugar and fat compared to high protein flour content.

Heat (Thermal) Conduction

One of the three modes of heat tansfer (conduction, convection, and radiation). In conduction, heat transfers through materials, or solids, while in other two modes, heat is transferred via liquids or gases.

I

Ignitor

In the case of Naigai Vicars, an ignitor is an electrode rod used to ignite our pipe ribbon burners.

Indirect Oven

An oven that bakes food using radiant heat etc. that has passed through a heat exchanger. Indirect heating oven.

M

Mixer

Equipment used for mixing/stirring/processing liquid and/or powder. e.g. Horizontal Mixer, Vertical Mixer. Naigai Vicars mixers are high-speed, using double-helical beaters on a horizontal shaft.

Modutrol Motor (Control Motor)

A control motor that adjusts the flow rate for required combustion air in combination with a butterfly valve (pneumatic control valve).

O

Oven

A thermally insulated chamber (equipment) used for the heating, baking, or drying of a substance, primarily used for cooking food. In Naigai Vicars' case, our ovens are tunnel ovens used for the industrial production of cookies, biscuits, and other confectionary products. e.g. Direct Oven, Indirect Oven, Gas Oven, Electric Oven etc.

P

Pipe Ribbon Burner

A type of burner that provides uniform heat via holes along a pipe via premixed combustion. The ribbons are made of stainless steel. These types of burners are used for baking bread, cookies/biscuits, crackers, and other types of confectionary products. Naigai Vicars' pipe ribbon burners provide exceptional flame retention and uniform flames along the pipe and can be adjusted to various levels.

Pressure Reducing Valve (PRV)

A valve that adjusts/controls the pressure within pipelines at the secondary side to a set pressure, and act as protection for the system, with the goal of preventing instrument or equipment failure.

Pre-Purge

Pre-purge is the stage at the beginning of the baking process whereby unwanted, or residual air-fuel mixtures are replaced with fresh air via a blower into the oven furnace, prior to the ignition of the burners.

R

Radiant Heat

Heat transfer by heat rays through air such as far infrared. Radiation is the method of heat transfer, or energy transport, that does not require any contact between the heat source and the heated object.

S

Soft Biscuit

Biscuits with relatively high levels of sugar and fat, using low protein flour, which results in a softer consistency.
